Pickled Watermelons
- 250g peeled watermelon rind
- 3 tablespoons salt
Brine
- 400ml apple cider vinegar
- 200ml water
- 165g sugar
- 1 tablespoon salt
- 4 slices of fresh ginger
- 1 teaspoon of allspice berries
- 3-4 juniper berries
- 2 star anise
- 1 teaspoon black peppercorns
Cut off the green outer skin. Slice and salt, place in a container in the fridge overnight. Discard the watermelon tears and rinse of excess salt, dry them.
On a low heat brine ingredients, dissolve the sugar, bring to a gentle simmer then turn off and let it all infuse. Cover your melons and allow to cool. Once cool pop them in the fridge and they'll be good for two months.
